Triple Cooked Chips

We are big fans of homemade fries, they are a lot faster to make than people think and miles better than anything frozen. These Triple Cooked Fries take a bit longer but they are Michelin standard so get practicing until you master them, totally worth the effort.

You will need:

  • Some good quality potatoes, peeled
  • Sea salt
  • Boiling water
  • Oil, for frying

Put some water in a pan and bring to the boil. Peel and wash the potatoes, then cut them in thick batons like so.

Once the water is boiling, salt slightly and add the potatoes. They need to cook until they are soft but don’t let them go too soft and break to the touch. It will take around 10-15 minutes.

Carefully drain the potatoes and spread them on a baking tray to cool down while you set your deep fryer to 130 degrees. Fry the potatoes until pale gold and take them out. Set the fryer to 190 degrees and, once hot, cook the potatoes for a third and last time until dark golden and crispy. Place on a tray covered with kitchen towel to absorb the excess oil and season with sea salt.
